Cynthia Holzapfel is a health editor and research writer specializing in vegetarian cooking and nutrition. As managing editor for Book Publishing Company, she has contributed to more than 100 cookbooks and health titles. She is author of "Apple Cider Vinegar for Weight Loss and Good Health" and co-authored "Coconut Oil for Health and Beauty" with her daughter, Laura.

Cynthia also runs a successful company, The Mail Order Catalog (www.healthy-eating.com). She lives on The Farm in Summertown, Tennessee—America's largest intentional community—with her husband. She has two children and two grandchildren.
